I can easily alter the flavor based on the items that are in season while maintaining the recipe and cooking method.   1. Set the oven to 350°F.
  2. Repeatedly rinse the rice until the water is clear.
  3. Set a small cast iron or Dutch oven on a medium-heat burner.
  4. Once the saucepan is hot, add the grapeseed oil and ginger slices, stirring constantly to prevent burning.
  5. Once the ginger has become translucent, add the rice to the saucepan along with the water, asparagus stalks, sesame oil, soy sauce, and rice vinegar.
  6. Stir the rice often while cooking it to prevent burning and sticking.
  7. After the rice starts to boil, add the bok choy, asparagus tops, and sugar snap peas on top of the rice.
  8. Cover the top of the rice with the lid firmly, then bake the cast iron or Dutch oven for 30 minutes.

After the rice has finished cooking, remove it from the pot and let it cool for approximately five minutes at room temperature. Then, open the lid and stir the rice, integrating all of the crispy pieces off the pot’s edges.

Step 1: Set the oven to mark 6 at 200 °C (180 °C fan). Butter will melt when heated in the oven after being added to a large roasting pan or serving dish. 

Step 2: Stir in the courgette, leek, garlic, and salt after gently removing the dish or tin from the oven after the cheese has melted. Once more, roast the veggies in the oven for 20 minutes, stirring once, or until they begin to soften.

Step 3: Take the dish or pan out of the oven and stir in the risotto rice, coating it well in the oil. Combine the stock, lemon juice, and zest after adding them. Rice will be practically soft after 15 minutes in the oven if the dish/tin is securely covered with foil (there will still be liquid in it).

Step 4: Take the dish or pan out of the oven, then toss in the remaining ingredients. Recover with foil and re-bake for 10 minutes. When the rice is cooked and has absorbed the liquid, remove the foil and simmer for a further 5 to 10 minutes. 

Step 5: Taste the food for flavor before adding more cheese and mint. Serve.
